Chicken Alambre Tacos

Alambre is a famous Mexican dish. "Alambre" literally means "wire" in spanish. There is a believing that the name comes behind the skewers used to cook its ingredients but traditional Alambre is not cooked in skewers anymore.

This dish is a combination of vegetables and meats, you always have the option of adding cheese in the Taquerias.

In this instructable I will show you how to cook authentic Mexican Alambre of chicken and vegetables.

Gather Ingredients

  • 3 chicken breasts
  • 3 peppers (1 red, 1 yellow, 1 green)
  • 1 big red onion
  • 14 Corn tortillas
  • Guacamole (optional)

Chop Vegetables

Cut peppers and onion into small squares. Do not mix onion with peppers (you can mix peppers between them).

Cook Vegetables

Cook peppers in a covered pot at low temperature with one spoon canola oil. Stir occasionally. Peppers will look cooked once they have changed color and look softer.

Repeat cooking process with onion. You will find out that onion is cooked when it looks pink.

Cook Chicken

In a separate pan, cook chicken with salt and pepper and cut it into squares.

Mix

Now that everything has been cooked you only need to mix it all, add salt as needed. If you want, you can add cheese with hot ingredients so it gets gratinated.

Serve in Tacos

Serve in warm tortillas. You can add lime and guacamole.
