Chewy Chocolate Cookies With White Chocolate Chips

This summer I went to an AWESOME summer camp in the mountains. Generally, the food for every meal was amazing. This particular recipe I made, these “Chewy Chocolate Cookies with White Chocolate Chips,” were inspired by the cookies that were served one evening at that summer camp. My goal was to get them nice and chewy, and rich and chocolaty–very much like the ones at camp, and I think they turned out amazing.
The second time I made them, (and by suggestion of one of my friends), we added crushed Heath Bars to the mix and it tasted PERFECT. So feel free to do that as well, but it is purely optional. So try them out; if you love chocolate, you’ll love these cookies!
Ingredients
Ingredients: makes approximately 30 cookies
¾ cup white sugar
¾ cup brown sugar
1 cup butter, softened
1 egg + 1 egg yolk
2 teaspoons vanilla extract
2 cups flour
⅓ cup cocoa powder
1 teaspoon salt
½ teaspoon instant coffee powder
½ teaspoon baking powder
½ teaspoon baking soda
½ cup melted chocolate
2 tablespoons oil
2 cups white chocolate chips
Butter & Sugars
Preheat oven to 350 degrees.
Whisk the butter, white sugar, and brown sugar together in the bowl of a stand mixer. Whip until fluffy and light, at least a minute.
Eggs & Vanilla
Add egg, yolk, and vanilla, and beat until just incorporated.
Dry Ingredients
In a medium bowl, combine flour, cocoa powder, salt, instant coffee powder, baking powder, and baking soda.
Combine It All Together
Gradually add first the oil, then melted chocolate, then flour mixture into the stand mixer, mixing until completely incorporated.
Pour in the white chocolate chips, and stir them in by hand.
Shape and Bake the Cookies
Place cookies in 1 inch balls on an ungreased baking sheet or (preferably) a baking sheet lined with a silicon baking mat.
Place cookies in preheated oven and bake for around 11 minutes, or until still barely soft in the center.
Take out of oven, and let cool a few minutes before consuming.
