Chevre Cheese Pie
I made chevre, a type of soft cheese, from the milk from our goats. I also separated the milk to get the cream.
Supplies
60 vanilla wafers
1/2 cup butter
1/3 cup sugar
1 pound chevre cheese
1 tsp almond flavoring
1 cup cream
fruit (optional)
Pie Crust
Crush vanilla wafers.
Mix in melted butter and sugar.
Press into the pie pan.
Pie Filling
Whip the chevre, adding a splash of almond flavoring.
Whip the cream.
Fold the whipped cream into the chevre.
Put the pie filling into the pie crust.
Refrigerate for approximately one hour.
Top with seasonal fruit (blackberries in this case).
