Cheesy Potato Waffles

Have you ever had delicious crispy, cheesy potatoey goodness in the form of a waffle?!?!?! well today's your lucky day if not!. Honestly, these are such a delicious and fun breakfast option that goes perfectly with eggs, bacon and pretty much anything else! A perfect savoury option fro breakfast, brunch and lunches too!! They are incredibly easy to make and a great recipe to cook for when you have leftover mashed potatoes from the night before!

Ingredients & Equipment

Ingredients

- 2 Cups of mashed potatoes (either leftover) or 4-5 potatoes (peeled and chopped into even bitesize pieces).

- 2 Extra Large eggs (at room temperature)

- 1 Cup grated Cheddar cheese

- 1/4 Cup grated mozzarella

- 2 Tbsp freshly chopped chives (I use garlic chives for additional deliciousness)

- 1 tsp salt (you may need more or less depending on how salty your cheese is)

- 1 tsp garlic powder

- 1/4 tsp bicarbonate soda

- 1/4 tsp baking powder

- 1/4 Cup of milk (you might need more or less depending on your potatoes ie. if you are using leftover buttery mashed potatoes you will need less milk)

- 1/4 Cup panko breadcrumbs

- 1/4 Cup Self-raising flour

To Serve

- Sour Crea

- Freshly chopped Chives

- Any additional extra breakfast foods such as eggs or bacon :D

Equipment

- Waffle Iron

- Large mixing bowl

- mixing spoon/ fork

(For the mashed potatoes)

- Medium saucepan

- Potato ricer or masher

Make Your Mashed Potatoes (if Not Using Leftovers)

To make your fluffy mashed potatoes make sure your potatoes are chopped in equal-sized bits so that they cook evenly. Place them in your saucepan with COLD water! (do not put these in hot boiling water straight away this can make them grainy).

Then bring the potatoes up to a boil and cook for about 10-15 minutes or until cooked through (this depends on the size of your potatoes). Then drain your potatoes of all the water and mash them either in a potato ricer (this will make them extremely creamy) or with a hand-held masher until smooth.

Mix It All Together

In your large mixing bowl combine the mashed potatoes, eggs, milk, chives, cheeses, salt, garlic powder, bicarb soda, baking powder, panko crumbs and flour until you reach the desired consistency. You do not want it to be runny at all (if this is the case add a couple tablespoons more of flour).

Make Your Waffles

Heat up your waffle iron and make sure it is properly pre-heated before you place the mixture on there. Also, make sure you have nonstick or add butter to the iron if you do not.

Make sure that you cook the waffles due to your waffle iron instructions, mine is about 4-5 minutes each side (i recommend doing a practice one to time your desired crispiness.

I like making these waffles in a cute little circle shape. I place a small ball (approximately 1/4 cup) in the centre of each rectangle and close the iron (It is so cute!!!) of course you can make these rectangular too. i get about 12-16 waffles from this

I find that these waffles are terrific on their own with a bit of sour cream and fresh chives sprinkled on top. But they are also an incredible base for eggs benedict, to go with a side of eggs, bacon and spinach AHHHHH So many options!!!!
