Cheesy Cauliflower Soup With Ham
My Mom used to make this soup for me and my sisters, we always loved it.
The picture shows my favorite way to make it, with broccoli and cauliflower.
You can use any cheese you want, but I prefer Velveeta.
Ingredients
1 Head of cauliflower. Or half cauliflower and half broccoli.
1/2 cup of diced onion.
4 tablespoons of butter. (This is not a diet soup)
1/4 cup of flour.
3 cups of chicken broth.
2 cups of milk.
1 1/2 tablespoons of Worchestershire sauce.
8 ounces of Velveeta cheese. (I add a bit more)
1 small can of mushrooms (or more if you like)
2 cups of diced ham. (or chicken or turkey)
Let's Cook It!
Cook cauliflower in boiling salted water for 10-15 minutes. Drain and set aside.
Saute onion in butter until tender (it will look kind of clear).
Blend in flour. Add broth, milk, and worsestershire.
Cook until slightly thickened.
Add cauliflower, mushrooms, ham, and cheese.
Keep cooking until the cheese is melted.
Top it off with chopped chives.
Serve and enjoy!
