Cheesy Base for Cheesy Pizza 🧀

Hello everyone!

Some of us like pizza on thick, someone on the thin dough, I'd like to share with you a recipe of another one option, which not thick and not thin… It's a cheese dough. It perfectly suits to cook cheese pizza, but you can use this base with any other toppings.

Ingredients

For dough:

  • 350-370g of flour + extra flour for scattering
  • 160g sour cream with ≈20% fat
  • 160g kefir
  • 150g cottage cheese
  • 100g melted unsalted butter
  • 1 tsp baking soda
  • 1 tsp salt
  • 1 tsp sugar

For toppings:

  • 250g mozzarella or sulguni cheese
  • 250g feta cheese
  • 250g cottage cheese
  • 150g cheddar cheese
  • parsley

Pour kefir into the sour cream, then add salt, sugar, and baking soda and mix. Wait until the mixture starts bubbling and add melted butter, cottage cheese. Move this mixture to the large bowl, if already haven't done this, add flour and knead the dough. I'm doing this in the kitchen machine, but this could be done by hands. The dough has to be soft and sticky, do not add more flour to stop it sticking to fingers or surface. If you can take a piece of dough in hands and it doesn't break on pieces, it means that it's ready. Please check attached photos for reference.

Forming the Dough

Start oven to preheat 200˚C. Prepare the pizza baking sheet, cover it with baking paper. If you have no baking sheets for pizza, use conventional baking sheets, covered with baking paper. Divide this amount of dough to 3 equal pieces. Scatter hands with the flour and form the circle ≈ 30 cm Ø and put aside.

Making the Cheese Toppings

Cut the sulguni/mozzarella cheese on cubes or roughly grate.

Add cottage cheese, feta cheese, and mix. Put the cheese topping on the pizza base and cover with 3-4 slices of cheddar cheese.

Optionally you can add parsley into the cheese mix.

Bake at 200ËšC for 12-14 min or until the dough will have a golden brown color.

As a result, we'll have a perfect cheesy-cheesy pizza with soft and optimal thickness of the dough. It's very tasty as hot and cooled down.

Optional Step

As an option, you can bake pizza bases in advance without any toppings and use it the next day. After this, you can grab any of them and make a pizza much faster … e.g. you planning a party :)
