Cheesecake Fruit Tarts


Ever need something quick for a party? This original recipe for a bite-size tasty snack is perfect.

Gather all ingredients
Crust
1 1/4 c flour
1/4 c sugar
1/8 tsp. salt
1/2 c butter, cut into pieces
Filling
1/2 c whipping cream
2 oz. cream cheese
1Tbs. sugar
Toppings
fresh fruit
1 tsp. lemon juice
2 spoonfuls honey spread
crushed lemon heads
sweet mint garnishing
Crust

Preheat oven to 350 degrees. Put the flour, salt, and sugar into a bowl and mix them together. Put the butter pieces in and use your fingers, a fork, or a pastry cutter until the putter pieces are mixed in and are about the size of peas.


Mix in the water until the dough can stick together. Form it into 24 small balls.


Spray two mini muffin pans with non-stick cooking spray. Put a dough ball in each cup and press them into the shape. Put them in the oven for 14-16 minutes. When they're done, wedge them out with a table knife. Set them out to cool.

In another bowl, whip the cream. Then beat in sugar and cream cheese.

Spoon the filling into each tart shell. Put fresh fruit on each tart. Then mix together the lemon juice and honey spread in a small bowl. Drizzle the mixture on each tart and sprinkle them with crushed lemon heads. Garnish with sweet mint leaves.
