Cheese and Bean Burritos With Avocado
Delicious vegetarian kidney bean and cheese burritos with crushed red beans, tomatoes and cumin, topped with creamy coriander and lime avocado, sour cream and grated cheddar cheese all encased in a soft burrito wrap.
Supplies
Wrap
- 1 avocado
- black pepper (to taste)
- 40 grams cheddar cheese
- 12 sprig fresh coriander
- 2 cloves garlic
- 1 tsp ground cumin
- 1 tin tinned kidney beans
- 1 lime
- 1 tbsp olive oil
- salt (to taste)
- 2 tomatoes
- 4 wraps
- 0.5 onions
- 0.5 tsp chilli flakes
- 120 ml sour cream
Prep the Onions
Ingredients
- 1 tbsp olive oil
- 0.5 onions
Method
- heat the olive oil in the frying pan
- peel and chop the onion(s) finely
- add to the frying pan
Add Spices
Ingredients
- 2 cloves garlic
- 1 tsp ground cumin
- 0.5 tsp chilli flakes
Method
- peel and crush the garlic using the garlic crusher or chop finely add to the onions
- add cumin and chilli flakes
- fry for approx 1 minute to bring out the flavour of the spices
Add the Beans
Ingredients
- 1 tin tinned kidney beans
Method
- Drain the beans and wash in cold water, add to the onion mixture
- Gently squash some of the beans with a fork
Add the Tomatoes
Ingredients
- To Taste black pepper
- To Taste salt
- 2 tomatoes
Method
- wash and chop the tomatoes, add to the bean mixture
- cook for a minute or two
- taste and season with salt and pepper if necessary
- set a side
Make Avocados
Ingredients
- 1 avocado
Method
- cut the avocado(s) in half remove the stone and skin, slice lengthways into thin slices
- add to a small bowl
- mash with a fork
Make Avocado Dressing
Ingredients
- 12 sprig fresh coriander
- 1 lime
- To Taste black pepper
- To Taste salt
Method
- wash and finely chop the fresh coriander
- add to the avocado
- squeeze the lime(s)
- add the lime juice to the avocado
- season with salt and pepper
Prep the Wraps
Ingredients
- 40 grams cheddar cheese
- 4 wraps
- 120 ml sour cream
Method
- warm the wraps in the microwave for 30 seconds or cover the wraps in foil and place in the oven for 5 mins till warm
- grate the cheese
- to make the burrito spread a little sour cream over the wrap
- then pile the beans and avocado and cheddar cheese in the middle of the wrap . Bring the bottom up
- then fold the side in to make a cup like object
- serve two bean and cheese burritos for each person
