Supplies

  • 250gr of Rice Noodles
  • 1 Lemon
  • 2 Carrots
  • 2 Spring Onions
  • 4 radishes
  • Light Soy Sauce to taste
  • 1 Red Cabbage
  • 1 Cucumber
  • Bread

Crouton Creation

Start by slicing your bread into adorable little cubes. Sprinkle with a dash of salt and pepper.

Spread them out on a baking sheet and pop them in the oven at 180°C (350°F). Bake until crispy, turning them from time to time. This should take around 10-15 minutes. Keep an eye on them – you want golden, not burnt!

The Red Cabbage

Take your red cabbage and slice it up. Pop the slices into a large pot of boiling water.

Boil the cabbage until it’s soft, releasing a vibrant purple hue into the water. Remove the cabbage and set it aside (maybe for a tasty salad tomorrow?).

Let the Magic Begin

Place your transparent rice noodles into the warm, purple cabbage water. Let them soak for about 10 minutes or until they’ve softened and turned a beautiful shade of purple.

Take them out of the water and let them cool down


Bonus Tip:

The purple cabbage water isn’t done with its magic yet! Use it to dye other foods. For example, boil some eggs, peel them, and let them soak in the cabbage water for about an hour. They’ll turn a stunning blue! Experiment and have fun with natural food colouring.

While your noodles are soaking up the magic, cut up your veggies. Slice radishes, cucumber, and spring onions.

For the carrots, why not get creative? Cut them into fun shapes like stars (or whatever your heart desires). If your knife skills aren’t up to par (like mine...), grab a cookie cutter for perfectly shaped stars.

Assembling the Salad

By now, your noodles should be cool and ready. Drain them and place them in a large serving dish.

Toss in your crispy croutons and chopped veggies. It’s a rainbow of health!

Cut your lemon in half and give it a good squeeze over the noodles. Watch in awe as a bit of chemistry magic happens – the purple noodles will turn a delightful pink right before your eyes!

Drizzle some soy sauce over your salad to taste. Toss everything together gently and voila – your magical chameleon noodle salad is ready to enjoy!
