Cereal Into Lemon Bars

Hi everyone, today I will be sharing how to make Rice Krispy Cereal into tasty Lemon Bars! Ever want a delicious treat but just don't know how, this is a really easy step by step recipe that anyone can use! I used the breakfast cereal Rice Krispy Treats but you can really use any kind you like!

Supplies

For the Crust:

3 cups of Rice Krispy Cereal

1/3 cup of granulated sugar

7 tablespoons of melted butter

1/2 teaspoon of salt

For the Curd:

1/2 teaspoon salt

2 tablespoons of flour

3 eggs

1 egg yolk

1 cup of sugar

1 teaspoon cream of tartar

2 lemons zested and juiced out

Crush Cereal

Blend or crush your cereal until pulverized and preheat the oven to 400 degrees.

Pour Into Bowl

Pour the sugar, cereal, and salt into a medium mixing bowl.

Mix!

Mix the ingredients until combined.

Add the Butter

Add the melted butter to your medium mixing bowl.

Mix It Together

Mix until combined. It should be a little crumbly, so don't panic if it is!

Line Your Pan

Line your baking pan with tinfoil so its like a sling when you pull it out. You can use a square, circle, rectangular or any type of pan you want, I used a square 9x9 pan.

Into the Pan

Poor your mixture into the pan and press it down until it is level and not bumpy.

Bake!

Bake at 400 degrees for 12-16 min until it is golden brown and let sit for 5 minutes. It may come out of the oven soft but after you let it sit it will be a delicious crust!

Starting the Lemon Curd

Add the flour, salt, cream of tarter, and sugar to a bowl and mix.

Adding Eggs

Add your 3 eggs and 1 egg yolk to the mixture and mix.

Now the LEMONS!

Put the lemon zest and lemon juice in as well and mix.

Now for Heat

Put your curd in a small sauce pan and heat it on low to medium heat for 5-8 minutes until 160 degrees. Stir continuously because you don't want your curd to curdle.

Butter Time

Take your sauce pan off the heat and add 4 tablespoons (half a stick) of unsalted butter, stir until melted.

Any Curdled Bits?

Just in case some eggs curdled and to get rid of the lemon zest strain your curd.

Into the Pan

Pour the lemon curd onto the pan that has your crust tilt it from side to side to make sure everything is covered. (It doesn't have to be perfect since it will level it self out :))

Bake It!

Now place your pan into the oven and bake it at 350 degrees for 5-8 minutes.

Let It Sit

Let it sit for an hour to an hour and a half.

Cut

When pulling it out of the pan grab it by the tinfoil and pull gently. Take a large sharp knife and cut your lemon squares/bars into pieces however big or small you want. To ensure clean cuts wipe your knife on a towel between every cut. To get a heart you can use a cookie cutter or any other shape to personalize just for you!
