Cauli-Cous!
When you start eating a raw diet, there are some foods that you assume you will never be able to eat again. Pretty much anything made from wheat is out. But what if I told you there was a way to make and eat cous-cous which was faster than normal cous-cous (yes, really!), gives you at least one of your 5-a-day, and is 100% raw? Too good to be true?

Ingredients Needed
For this recipe, you will need:
1/2 head of cauliflower
10-20 almonds
1 clove of garlic
Zest of half a lemon
2-3 Tbs fresh lemon juice
2 Tbs fresh herbs (I used 1 tbs basil, 1 tbs parsley)
1 Tbs Olive oil
Salt and pepper to taste
(Optional - 5 Cherry tomatoes - roughly chopped)

Step 1
Throw your choice of herbs, the garlic, and the almonds into a food processor. I like a lot of almonds in mine, but just use what you have to hand.
Step 2
Using the food processor, blitz the herbs, garlic and almonds until they are chopped into small pieces.
Step 3
Next (it couldn't get any easier) - throw in the rest of your ingredients (except the tomatoes, if using). If you're using a small food processor you may have to do this in batches, but if you have a larger one just throw it all in, and blitz until the cauliflower has been broken down into cous-cous sized pieces. Give it a taste, and add more lemon juice, salt, pepper or herbs if you think it needs it.
This is delicious as it is, but feel free to stir in some freshly chopped tomatoes to add an extra dimension.

Garnish with some fresh herbs, if you like, and dig in! This will last a few days in the fridge (if you can stop yourself from eating it for that long), and will taste just as nice.
