Carrot Cake Self Care

I chose this for the self care challenge because I feel like I never truly take the time to make a carrot cake. I think probably because it takes longer and the recipe is different along with the icing. But I decided to spend some time on myself and make a carrot cake.

Wet Ingredients

Firstly preheat your oven to 180/400 degrees

In a bowl with a whisk combine

180g of sugar

180ml of sunflower oil

3 eggs

Using oil instead of butter gives the cake a very nice texture once cooked

Carrot + Orange

Once the wet ingredients are combined together

add 200g of grated carrot

the zest of 1 orange

Mix further

Dry Ingredients

To your bowl sieve in

175g self raising flour

1 tsp baking soda

2 tsp cinnamon

nutmeg if you want

This is also the time to add walnuts or raisons if you wish.

Fold the batter so you don't lose any air

Cook the Cake

Put the cake batter in a lined cake tin and bake for 40-45 minutes.

You need to let it cool before icing.

Icing

For the icing you need:

Icing sugar 300g

butter 100g

150g soft cream cheese

Combine

add more of whatever gets your icing to your dream consistency

Walnuts

For decoration I recommend chopping up some walnuts

Ice the Cake

Using a spatula spread the frosting/icing over the cake.

Any left over icing can be frozen.

Sprinkle on the walnuts and your done !
