Cardamom Buns

For this task I am going to be showing you how to make cardamom buns.

Supplies

FOR THE DOUGH:

1 ¼ cups/300 milliliters milk

2 ¼ teaspoons active dry yeast

4 cups/510 grams all-purpose/bread flour

¼ cup plus 3 tablespoons/90 grams granulated sugar

85 grams unsalted butter (softened)

2 tablespoons ground cardamom

1 teaspoon fine sea salt

FOR THE FILLING:

1 cup plus 2 tablespoons/250 grams unsalted butter (slightly softened)

1 cup/200 grams granulated sugar

2 tablespoons ground cardamom

¼ teaspoon fine sea salt

TO FINISH:

1 large egg

1 tbsp cardamom

3 tablespoons granulated sugar

Make the Dough

1. Pour milk into a small pan and bring it to a low heat. Once luke warm, remove it from the heat and add the yeast. Let sit for a few minutes.

2. Then combine all of the ingredients into a bowl, food processor, KitchenAid or bread machine. (I used a bread machine and put it on the dough setting )

When kneading the dough, there are so many ways to do it. If you have a food processor with a dough blade, you can use a KitchenAid, a bread machine, or you can do it manually with your hands. To knead it with your hands, combine all of the ingredients in a bowl until it is somewhat combined, then move it onto a floured surface and knead it with your hands (takes about 8 minutes)

3. Place dough in a sheet pan and cover with plastic wrap. Let it sit for 1.5 hours at room temp.

Make the Filling & Roll Out the Dough

FILLING:

1 cup plus 2 tablespoons/250 grams unsalted butter (slightly softened)

1 cup/200 grams granulated sugar

2 tablespoons ground cardamom

¼ teaspoon fine sea salt

For the filling, mix butter, sugar, cardamom and salt until it forms a granular paste.

Once the dough is ready, roll it out on a lightly floured surface, a baking sheet or a silicone mat with a rolling pin.

(it should be roughly a 15-by-18-inch (38cm by 43 cm) rectangle a little more than 1/8-inch thick (0.3 cm) )

I didn't really do this so like honestly, just do whatever size you think works.

Spread Filling Onto the Dough

Spread the filling using a spatula

Fold the Dough

With the short side of the dough facing you, fold the top third of the dough down over the middle third of the dough. Then fold the bottom third up to cover the remaining dough. (follow the gif above)

Gently flatten the dough by lightly rolling over the dough with the rolling pin

Twist the Cardamom Strips Into Buns.

Using a pizza cutter, cut strips like shown above.

Twist the strips like shown in the gif above and place on a baking sheet.

(It doesn't matter what shape you make, although I like to wrap it around 4 fingers and take the end of the string and wrap it across the hole of the ring you just created)

Allow Them to Rise on a Baking Sheet

Make sure that there is space between them on the baking sheet

Let them rise for another 30-45 minutes.

Heat oven to 190 degrees celsius (375 F)

Finishing Touches

Whisk the egg together with 1 tbsp. Water.

Combine 1-2 tbsp cardamom with the sugar in a small bowl. Brush the egg onto the surface of the buns and sprinkle the cardamom sugar on top (using about ½ tsp. Per bun) Bake in oven for 20-25 minutes until surface is golden brown.

Take Them Out of the Oven and Allow Them to Cool.
