Supplies
Tagliatelle noodles, Parmesan, Bacon, Cream (or leftover salty pasta water if you are lactose intolerant), garlic, butter, chives (optional), salt, and pepper.
Prep the Ingredients
Slice and cook the Bacon on medium high heat and place to the side when finished.
Finely grate or zest fresh parmigiano reggiano cheese.
If you do not have a garlic press, dice your garlic.
(Optional) Slice the chives
Have a pot of water heating up and ready to boil for the pasta.
The Alfredo Sauce
Start by adding butter to a pan and cooking diced garlic on medium heat.
Once the garlic is cooked, turn down the heat to medium low and pour cream onto the pan.
Before the cream gets too hot, crack an egg into the sauce and stir it into the sauce and stir often until the sauce is complete.
Once the cream becomes hot, (not boiling) add grated parmesan and stir into the sauce as it melts.
Season the sauce with thyme, oregano, salt, and pepper.
Cook the Pasta Noodles
Bring the water to a boil in a pot.
Salt the water heavily. (almost as salty as seawater)
Cook the pasta until the noodles are al dente (cooked through but still firm).
Drain the water out of the noodles when they are complete and stop cooking the noodles.
Note: Dry pasta takes about 10 minutes fresh pasta takes 1-2 mins. Taste a noodle to confirm the noodles are done.
Assembly
Mix the alfredo sauce with the noodles until you get a good sauce to noodle ratio. You can keep any excess sauce and use later.
Gently mix in the cooked bacon.
Place the carbonara into a bowl. (preferably pasta bowl)
(Optional) Add chives and/or extra parmesan to the top of your dish.
Enjoy your dish!
