Caramels With Chocolate & Peanuts
You probably have seen pictures or recipes of the soft chewy caramels but have you seen them with chocolate and peanuts. I made caramels using Aunt Emily's Soft Caramels Recipe but I added peanuts on top and chocolate in the middle. Heres how you make them.
Materials & Ingredients

4-quart pot
Spatula
Knife
A Mold
Measuring cup
1 Teaspoon
Thermometer
Cutting board
- Ingredients
2 cups of sugar
1 cup of firmly packed brown sugar
2 sticks of butter
1 cup of milk
1 cup of whipping cream
1 cup of light corn syrup
1 teaspoon
Mini semi-sweet chocolate chips
Start by cutting up the peanuts (or you can by peanuts that have already been cut up into smaller pieces) using the knife, but make sure you put them on a cutting board so that you don't hurt your table. Next spray the mold with a non-stick cooking spray. Put the peanuts in the bottom of the mold.
Combine your ingredients in the pot, except for the vanilla. The vanilla you will mix in later.
Cook over medium heat, stirring occasionally, for 15-20 minutes or until butter has melted and mixture comes to a boil. Make sure you don't scrap the sides when you stir because you don't want crystallization to happen.
Add the thermometer, make sure it doesn't touch the bottom of the pot because you want it taking the temperature of the mixture not the pot. Continue cooking for 25-30 minutes or until the thermometer reaches 244 degrees Fahrenheit.
Next remove the pot from the heat and stir in the vanilla.
Put the caramel into the mold, make sure you leave enough room for the chocolate chips and more caramel. After you put the first bit of caramel add a few chocolate chips. Then put more caramel on top on the chocolate chips. Make sure you do this fast because the caramel hardens up really quick.
Then put the mold in the refrigerator for 1 hour. Then pop them out and enjoy.
