Caramelized Campfire Onions

The only thing better than a burger cooked over a campfire is a burger cooked over a campfire with caramelized onions on top!

A friend of mine introduced me to this recipe and now our family campfires aren't complete without some caramelized onions. Yum! Plus it takes only 3 ingredients and is super easy to make!

A few notes:

  • You can use non-sweet onions but the result is not nearly as tasty.
  • You can use most kinds of sugar. Personally I really like to use brown sugar. In the pictures we actually used pure cane sugar which is what we had on hand. They turned out really good.
  • You can make these on the stove but they just don't have that smokey fire-cooked taste to them.
  • We usually have a grate that we use when we cook over a fire but if you don't have one you can just place your pan right on the coals. Just make sure there is no plastic on your pan that will melt.

Supplies

You will need:

  • 3 medium vidalia onions (sweet onions)
  • 1/4 cup of butter
  • 1 1/2 tbsp sugar
  • a campfire

To prep, dice up 3 medium sweet onions and place them in a pan with 1/4 cup of butter (1/2 a stick) and 1 1/2 tbsp of sugar.

Cooking

Place your pan over the fire and let it melt the butter and sugar stirring periodically.

Let simmer for about 15-20 minutes. The butter and sugar should form a kind of thick sauce.

Remove from heat and serve with a campfire burger or any other dish and enjoy your delicious caramelized onions.
