This soup presented in a coffee cup is part of a whole menu of 3 or 4 courses or a small dish for a walking dinner.


The secret ingredient: coffee.

  • 200 grams mushrooms
  • 2 shallots
  • 20 grams butter
  • ½ l cream
  • 1 dl stock
  • 1 espresso

Tear the Mushrooms Into Pieces

Tear the mushrooms into pieces.
Chop the shallots fine.
Heat the butter and fry the shallots and mushrooms.
Add the cream and stock.
Bring to the boil , puree the liquid in the food processor.



Add Coffee and Season With Salt and Pepper.
