Canning Horseradish

Making Horseradish takes some time....This recipe will clean out your sinuses!

Ingredients:
Horseradish cut in cubes
Sugar
1-14 oz Sweetened Condensed milk
50/50 Water and vinegar
Salt
*optional 1/2 cup mustard

Materials:
canning jars and lids
blender or food processor
knife

Digging & Cleaning the Horseradish

Dig out your horseradish root, wash well and cut the tops off about an inch down. The tops can be replanted for new plants.

Preparing the Horseradish

Clean the Horseradish with a vegtable peeler(like you would a carrot).

Slice and then chop the Horseradish.

I made three batches 2 regular and 1 mustard horseradish.

1. Place about 2 cups chopped horseradish in blender/food processor.

2. Add 2 Tablespoons sugar, 1/4 cup Sweetened Condensed milk, 1/4 teaspoon salt, equal amounts water/white vinegar to cover the Horseradish (50/50) in the blender.

*We also made a mustard horseradish by adding 1/2 cup mustard to the mixture.

Blended until smooth or its the consistency that you like.

***At this point you can drain the Horseradish mixture and remove the excess liquid. ..... I decided not to drain my horseradish. I like the consistency with the liquid in it.

Refrigerate

Place in canning jars and refrigerate.
