Canned Chicken Tortilla Soup Makeover

Makeover your boring canned Tortilla soup with just a few ingredeints of your choice and easy preparation steps!!

Supplies

Please Note: All toppings and ingredients to the soup are your choice.

1 - 18.6 oz. Can Chicken Tortilla Soup - Any Brand

4 oz - Prepared Chicken Broth - Any Brand.

1/4 tsp Ground Cumin

1/2 Cup Cooked Chicken - Diced (I used Store Bought Rotisserie)

1/4 Cup Prepared Salsa (Any Brand)

1-2 Tbls Fresh Cilantro

1-2 Tbls Fresh Green Onion

1-2 Tbls Fresh Squezed Lemon or Lime Juice

1/4 to 1/2 Fresh Ripe Avacado

1-2 Tbls Fresh Pico De Gallo

1-2 Tbls Fresh Jalapeño

1/2 - 3/4 Cup Shredded Cheese

2-3 Tbls Cup Crumbled Queso Fresco

1/4 Cup Crumble Fried Tortilla Chips or Jalapeño Potato Chips

Chop and Prepapre All Your Choice Toppings

1. Chop the ingredients of your choice: Cilantro, Jalapeno, the Cooked Chicken, Pico de Gallo, Avacado, Green Onion. ( You can choose to buy all the ingredients all ready cut and prepared).

2. Crumble the Mexican Cheese - Queso Fresco.

3. Slice your Lemons or Limes.

4. Dice 1/4 to 1/2 of the fresh ripe avacado.

1. Mearsure 1/4 teaspoon of Ground Cumin.

2. Choice amount of shredded cheese - Any kind, I use the Mexican Blend. (Here I am using Dairy Free Cheese).

3. Crumble your fried tortilla chips. You can also use Jalapeño Potato Chips.

4. Measure the prepared Chicken Broth.

5. Measure your choice of premade salsa (about 1/4 to 1/2 cup, to your taste).

Creating the Soup Base

1. You will need to start a pot using medium heat.

2. Add your Tortilla Soup Can.

3. Add the cumin.

4. The lemon or lime juice (I added about 1 tablespoon).

5. Add the diced chicken.

6. Add premade salsa.

7. Stir the soup.

8. Heat to boiling, 212°F.

9. NOTE: To reheat cooled soup, reheat to 165°F.

1. Add about 1/4 cup shredded cheese to the bottom of the empty soup bowl.

2. Add your hot soup.

3. Add the ingredients for your own creation of toppings: Start with the remaining Shredded Cheese, Jalapeños, Pico De Gallo, Avacado, Cilantro, and Green Onions.

The Final Yummy Step!!!

1. Top with the Tortilla Chips or Crumbled Jalapeño Potato Chips.

2. Sprinked the crumbled Queso Fresco, sprinkle with more Lemon/Lime if desired.

3. Scoop up the soup starting from the bottom and see the strings of melted cheese.

4. Enjoy!!!!
