Campfire Spaghetti Casserole

Ingredients:

1/2 lb. Italian Sweet Sausage {Your Favorite Brand}*

1/2 lb. Italian Hot Sausage {Your Favorite Brand}*

1/2 Box #8 Pasta {Your Favorite Brand}

1 c Onion {Diced}

12 oz. Pasta Sauce {Your Favorite Brand}

2 c Shredded Cheese {Reserve 1/2 c for Topping/Your Favorite Flavor & Brand}

1 c Bell Pepper {Your Choice of Color/Diced}

2 Garlic Cloves {Diced}

2 Tbsp. Italian Seasoning Mix

Salt/Pepper/Garlic Powder {To Taste}

Parsley {Garnish Only/Optional}

Foil Pans {2-7” or 1-9"/NO HOLES}

Servings: 2-4

Prep Time: 20 Minutes

Cooking Time: 35-45 Minutes {Cooking times depend on how hot your fire is}.

*Italian Sausage Substitutes:

  • Any Sausage
  • Ground Beef
  • Ground Chicken
  • Ground Turkey
  • Bacon

If you are using link sausage first you need to remove both flavors of Italian sausage from their casing. In a large skillet break them apart and cook your sausage until almost done. Then place the sausage on some paper towels to remove any excess fat and set aside.

Before cooking your pasta break it into 4 sections. {This prevents needing a knife to cut it and possibly cutting through the foil pan when enjoying}.

Cook your pasta according to the directions on the package but only halfway into the cooking process. Then drain, rinse with cool water and set aside. {Rinsing the spaghetti stops the cooking process and prevents it from sticking together}.

Spray your foil pans with non-stick spray then add just enough pasta sauce to coat the bottom. Then place an even layer of spaghetti, some bell peppers, onion, sausage, cheese, sauce and repeat these steps one more time. {Adding salt, pepper, garlic powder/Italian seasoning to each level}. Reminder; before adding your cheese reserve ½ c to be added just before it has finished cooking.

Spray non-stick spray in the center of a piece of heavy duty foil and cover your meal. If you are not cooking it right away mark on the package what is inside. Do not tuck the foil under the container it will make it more difficult to remove when it is time to add the cheese.

When it comes to cook your Campfire Spaghetti Casserole place it {with the foil still on} onto the edge of the fire on the hot coals {as level as possible} and cook for 35-45 minutes, turning the container 180° about every 10-15 minutes. If you have a grill grate place it over the fire and cook on it. The grill grate makes it easier by keeping it level and cuts down on the chance of the foil pan tearing.

After 30 minutes you can remove the foil and add the remaining cheese.

Remove from the heat and let rest 5 minutes, when serving top with parsley {Optional} and Enjoy!

Warning: Any food coming out of the fire or off the grill will be hot when you go to remove your food from the fire be sure to use something other than your bare hands to retrieve your meals like pot holders, a tea towel or tongs.
