Campfire Breakfast Casserole

This is the breakfast version of my Campfire Spaghetti Casserole.

Ingredients:

1 lb. Breakfast Sausage {Your Favorite Brand} *

2 c Frozen Hash Browns {Your Favorite Brand}

4 Eggs {Whisked or Not Your Choice} **

1 c Onion {Diced}

2 c Shredded Cheese {Reserve 1/2 c for Topping/Your Favorite Flavor & Brand}

1 c Bell Pepper {Your Choice of Color/Diced}

Salt/Black Pepper/Garlic Powder {To Taste}

Foil Pans {2-7” or 1-9” Foil Pan/No Holes}

Servings: 2-4

Prep Time: 20 Minutes

Cooking Time: 35-45 Minutes {Cooking times depend on how hot your fire is}.

* Breakfast Sausage Substitutes:

  • Any Sausage
  • Ground Beef
  • Ground Chicken
  • Ground Turkey
  • Bacon

**Eggs Whisked

If you are going to whisk your eggs you do not have to add them into the first layer just the second.

If you are using link breakfast sausage first you need to remove them from their casing. In a large skillet break them apart and cook your sausage until almost done. Then place the sausage on some paper towels to remove any excess fat and set aside.

Spray your foil pans with non-stick spray then place an even layer of frozen hash browns, some bell peppers, onion, 2 eggs {If Not Whisked Together}, sausage, cheese and repeat these steps one more time adding the whisked eggs before the cheese. {Adding salt, pepper, garlic powder to each level}. Reminder; before adding your cheese reserve ½ c to be added just before it has finished cooking.

Spray non-stick spray in the center of a piece of heavy duty foil and cover your meal. If you are not cooking it right away mark on the package what is inside. Do not tuck the foil under the container it will make it more difficult to remove when it is time to add the cheese.

To cook your Campfire Breakfast Casserole place it {with the foil still on} onto the edge of the fire on the hot coals {as level as possible} and cook for 35-45 minutes turning the container 180° about every 10-15 minutes. If you have a grill grate place it over the fire and cook on it. The grill grate makes it easier by keeping it level and cuts down on the chance of the foil pan tearing.

After 30 minutes you can remove the foil and add the remaining cheese.

Remove from the heat and let rest 5 minutes and Enjoy!

Warning: Any food coming out of the fire or off the grill will be hot when you go to remove your food from the fire be sure to use something other than your bare hands to retrieve your meals like pot holders, a tea towel or tongs.
