Cake Tip

Get bigger cakes or more cupcakes from a box cake mix and make it taste more like homemade!
Start with one boxed cake mix. You will follow the directions but you'll be adding more ingredients. Baking temperature and baking time will be on the box. I used a Betty Crocker cake mix for this tutorial but any cake mix will do, just follow the directions and add the extra ingredients.

In a bowl add your cake mix.
Add:
1/2 cup flour
1/2 cup sugar
1 teaspoon baking powder
Use a whisk to stir all dry ingredients together.

An Extra Egg

Following the box directions add:
1 1/4 cups water
1/3 cup oil
3 eggs + 1 EXTRA egg = 4 eggs
Beat for time indicated on box.

Bake

The box said I would get 24 cupcakes (although this is often small cupcakes) and I was able to get an extra 7 large for a total of 31 large cupcakes.  If you were making a cake you would get a bit bigger cake.
Bake for 18-23 minutes at 350 degrees.

Icing

After baking I like to inject icing into the centre of the cupcakes, they travel much better in my kid's lunches and make for way less mess.
