Cake Mix Banana Mini Donuts
I had seen that someone had made donuts using just a cake mix and canned pumpkin. Smashed bananas are similar in texture to cooked pumpkin so I figured that would work and it did! Wow! They are actually fabulous and my family loved them!!!! Bet you can't eat just one!!!
Supplies Needed
2 medium mixing bowls
1 cup measure
teaspoon measure
fork
spoon
rubber scraper
whisk
electric donut maker
plate
Ingredients:
bananas, mashed, to make 2 cups
1 (15.25-ounce) box yellow cake mix
2 cups confectioners' sugar
1/4 cup milk
1 teaspoon vanilla extract
1/2 cup fudge ice cream topping
1 tablespoon sprinkles
The Bananas
Smash enough bananas to make 2 cups.
Make Donut Mixture
Place cake mix in bowl with smashed bananas. Blend well.
Prepare the Pan
Spray no stick cooking spray into wells of donut maker.
Bake the Donuts
For donut maker:
Spoon donut mixture into donut maker and cover. Bake until the light goes out, about 6 minutes.
Remove donuts and place on a wire rack. Repeat until all of the donut batter is used. This should make about 48 mini donuts.
Oven directions for full sized donuts:
Preheat oven to 350 degrees F. Spray donut pan with no stick cooking spray.
Spoon the batter into the wells of the donut pan, making 12 donuts. Bake the donuts for 10 to 15 minutes until lightly browned.
Let the donuts cool in the pans for about 5-6 minutes and then transfer to a wire rack.
Prepare the Glaze
In a medium bowl, whisk the confectioners' sugar with the milk and the vanilla extract. Dip the donut tops into the glaze, then place each donut on the wire rack.
Drizzle the Donuts
In a small bowl, microwave the fudge topping for about 20 seconds; stir. Drizzle the fudge topping over the tops of the donuts. Add as many sprinkles as you desire.
