Cajeta and Goat Cheese Pie

I was born in the city of Celaya in the state of Guanajuato, the birthplace of the cajeta, a traditional Mexican sweet made from goat's milk similar to dulce de leche (Milk Candy). It is the reason why I decided to prepare my recipe using this famous ingredient that has been exported to different places as the main base.

There are many flavours of cajeta like, vanilla, envinada, quemada and natural. I used quemada but this recipe can be made with any of the other options.

Once you taste it, you can hardly make normal cheese cake again ;)

Tools

  • Mixer
  • Blender
  • Pie mold 24cm
  • Measure cup
  • Oven 360°F
  • Spatula
  • Kitchen scale
  • Masher

Main Supplies

  • Goat cheese 375gr
  • Cajeta quemada (goat´s milk candy) 475gr

Cookie crust Supplies

  • Unsalted butter at room temperature 119gr
  • Biscuits/cookies 175 gr

Decoration (Optional)

  • Whipped cream
  • Cajeta (goat´s milk candy)

Getting Ready

First, separate all the needed ingredients already weighted. By doing this you will save a lot of time in preparation ;)

Time to Make the Cookie Crumble

Let´s start making the cookie crust.

Put the cookies on the mixer and pulverize the cookies, you can put all of them at once if your mixer is big enough if not, you can do it in stages until all the cookies are as dust.

It´s So Hot, or Why Am I Melting?

There are several ways to melt butter, you can use the one you like the most.

I put the butter in the measuring cup and heated it in the microwave until it was in liquid form as in the image.

Till' Death Do Us Part

It has come the time to get your hands dirty, so please wash them first.

Place the crushed cookie on your mold and expand it throug all the base.

Then pour the melted butter and make them stick together.

For the crust to be well placed in the mold, I used the potato masher to give it shape.

You can also use a tall glass.

When done, put the mold in the fridge while you start with the next step.

Let the Heat Begin

Start preheating your oven at 360°F, you can do it at this point if you are using an electric oven.

Place the goat cheese on the blender, add the cajeta and start mixing.

*All the quantitys on this recipe are from a taste that I know that everyone likes better, but if you think is too much of something you can add what you like the most (cajeta or cheese)*

It´s Almost Finished!

When everything is mixed take the cookie crust from the fridge and filled with it, try to get the most of the blender with a spatula.

Place the pie in the preheated oven at 360°F for 40 minutes or when the toothpick is clean.

This Is the End

Once the 40 minutes have past, take the pie out of the oven and let it cool at room temperature before you start decorating.


If you don't want to decorate it, you can wait for it to cool down and start eating. You can speed up the cooling process by putting it in the fridge.

Let your imagination fly and decorate your pie with some cajeta and whipped cream.

You can also add some nuts or strawberries, remember this is a kind of sweet pie with a sour touch.

*This is a little serving suggestion*

Coffee is the best companion to this pie.

If you made your pie for a family or friend reunion I recommend making two so everyone can have their spare share ;)
