CUCUMBER NOODLES
This is one of my favorite recipes to have in summers.
Its delicious, healthy and low fat. And tastes best when chilled.
Ingredients
1 medium size cucumber
1 small carrot
1 small tomato
2 lemons and zest from 1 lemon
1 cup coconut milk
1/2 cup cashew nuts
1 tbsp coriander leaves
1 tsp ginger-garlic paste
1 tsp sugar/ honey
1/2 tsp cumin seeds
1 tsp sesame seed
1/4 tsp pepper
1/2 tsp salt
Process
Use a slicer as shown in image and make noodles out of cucumber by slicing just until you reach seeds. keep the noodles aside and core will be used in gravy.
Now again using slicer, make noodles out of carrot.
And grate the lemon grind.
Put cashews in hot water, so as to soften them.
Add cucumber core, tomato, lemon juice, coriander, coconut milk, cumin seeds, salt, pepper, ginger-garlic paste, cashews and blend them until smooth gravy is achieved.
Done!
Mix the gravy along with the noodles (cucumber and carrot) add sesame seeds and lemon zest. Garnish and serve.
