CHOCOLATE CRINKLES
A delicious soft and chewy sensation for your mouth...maybe not for your waist.....but what the hell...you only live once
INGREDIENTS
4 oz of unsweetened chocolate
1/4 cup of salted butter
1 1/2 cups of unbleached all purpose flour
1/2 cup of process cocoa powder
2 teaspoons of baking powder
1/4 teaspoon of salt
4 large eggs
2 cups of granulated sugar
1 teaspoon of vanilla
1 1/2cups of semisweet chocolate chips
1/2 cup of confectionary sugar
1/4 cup of salted butter

MELTING THE CHOCOLATE
On a medium heat setting, use a double boiler or just place a large stainless steel bowl over some simmering water and whisk together both the butter and chocolate squares....Do not use the chips for this step...they get added later to the batter.
After all the butter and chocolate has melted, making sure not to over heat the ingredients, set a side and let cool...

MAKING THE BATTER
In a KitchenAid or equal, place the eggs, sugar, vanilla and mix until they turn a pale yellow, about 5 minutes or so. Continue to mix on medium speed and gradually introduce the cooled chocolate until fully incorporated. Add the dry ingredients and continue to mix. After the batter is smooth, stir in the chips with a rubber spatular. Cover the bowl with plastic wrap and place in the refrigerator for at least two hours, or until it sets.
PREPARING FOR THE OVEN
After the batter has become firm, take a tablespoonful of batter and roll between your hands forming a round ball, then place this ball roll it in a bowl of confectionary sugar until completely covered, place these balls approximately 3" apart on parchment covered cookie sheet. Place in an oven set to 375°F for 15 minutes or until firm...remove and place on a wire rack to cool.
