CHICKEN CORDON BLUE ROLL-UPS
My family loves Chicken Cordon Blue. This is my version of this delicious dish made in my Ninja Foodi Air Fryer. The ingredients are almost the same as the traditional dish with the addition of a tangy and creamy Dijon sauce as well as being wrapped in bacon. Who doesn't like bacon??!! Enclosing asparagus spears within the rolls gives them an unexpected crunch and freshness. I hope you'll try making this delicious version of Chicken Cordon Blue. Supplies
SUPPLIES:
Fresh asparagus spears
1 cup mayonnaise, divided
3 tablespoons whole grain mustard
6 chicken breast fillets, pounded thin if needed
12 slices deli ham, thinly sliced
12 slices deli Provolone, thinly sliced
6 slices bacon, thinly sliced
EQUIPMENT:
Cutting board or mat
sharp knife
mixing spoon
small bowl
measuring spoons
measuring cups (not shown)
wooden toothpicks (if needed)
Disposable aluminum baking pans with plastic lids
Thoroughly wash asparagus spears. Dry and cut off woody ends.
Place asparagus spears in an aluminum baking pan (that will fit in your air fryer), coated with cooking spray. Set temperature to 375 degrees F. When ready, place asparagus in air fryer basket and cook until crisp tender, about 4 minutes. Toss halfway through.
When done, remove asparagus and set aside to cool.
Meanwhile, prepare ingredients for assembly. You should have 6 pieces of thin cut chicken breast fillets, 12 pieces of thin sliced deli-ham, 12 slices of thin sliced deli Provolone and 6 thin cut slices of bacon.
Make the sauce in a small bowl by combining the mayonnaise and Dijon mustard.
Set aside 1/2 of the sauce to serve with finished rolls.
Set up an assembly line with prepared ingredients: chicken fillets, sauce, sliced ham, sliced Provolone, asparagus spears and bacon.
Spread each chicken fillet with sauce.
Add ham layer....
Then add cheese.....
And lastly, the cooled asparagus spears. Try to have at least 2 spears for each roll. If possible, have 3 or 4 depending on how thick the chicken fillets are and how easy it is to roll.
Complete rolls and secure with toothpicks if needed. You should have 6 rolls when you're done. I usually cook enough for that night's meal and save the rest for another night. Just cover with plastic lids included with aluminum baking dishes and store in the refrigerator for the next night.
Make sure air fryer is set to 375 degrees F and add food when prompted. Cook for 15 minutes, checking halfway through.
Your Chicken Cordon Blue roll-ups are done!! Remove toothpicks, if needed and spoon reserved sauce over top. Bon Appetit!!
