Butterscotch Spritz Cookies

Although these cookies were made and decorated for Christmas.  You'll want to make these super easy and delicious cookies year-round.  All you have to do is swap out the type of sprinkles used with any other season or themed shape sprinkles. 

Gather Ingredients

Ingredients:

1 cup unsalted butter, softened
1/4 cup granulated sugar
1 egg
1/4 cup lightly packed light brown sugar
2 1/2 cups all-purpose flour
1/4 teaspoon salt
1/4 teaspoon butterscotch extract

Prepare Dough

Preheat oven to 400 degrees F.

Combine butter and sugar in the bowl of a stand mixer fitted with the paddle attachment. Mix on medium speed until light and fluffy, approx 2 minutes. Add egg and mix just until incorporated. Add flour, salt, and butterscotch extract and stir just until dough is formed.

Without refrigerating roll dough into small cylinders, then transfer them onto your cookie press and form desired shapes onto an ungreased cookie sheet.

Use a pair of tweezers to help you place sprinkles on cookies once they have been pressed.

Bake 8 – 10 minutes or until set and bottoms are golden brown. Transfer cookies to a wire rack to cool completely.

Note: If using dark cookie sheets baking time may need to be reduced by 1 minute or so.
