Butter Mints

My Hubby just came up stairs, with the words “What is that I smell?” My reply: “Butter mints”. Hubby: “Where are they?” Me (thinking to myself): {Do I want him to know? He will eat them all.} Out loud I say: “They are on the plate on the counter.” Good thing these are easy to make, because I am going to have to make other batch, soon. This is how to make your own.

Ingredients:
2 Tablespoons of softened butter
1 ¾ cup powdered sugar
2 Tablespoons of sweetened condensed milk
¼ teaspoon mint flavoring, oil based is best (I chose wintergreen)
Food coloring (optional, I used green)
Supplies:
Food processor (with chopping blade)
Measuring cups
Measuring spoons
Parchment paper
Ruler
Pizza wheel
Ignore the icing tips, they were part of an experiment that failed.

Put the butter into thefood processor.

Pulse until the butter is spread all over the bottom.

Add the powdered sugar,

sweetened condensed milk, and mint flavoring.

Pulse until the ingredients all mix together and form a ball. Taste the mint mixture and decide if you want to add a little bit more flavoring (I didn’t).

This is the point where you add a few drops of food coloring. Pulse until the coloring is spread evenly though out the mint candy.

Spread out a piece of parchment paper. Sprinkle some powder sugar on the paper. Remove the mint candy and divide into 4 pretty even balls. Roll each ball into a ½ inch in diameter snake (around 12 inches long).

Use the pizza wheel to cut each piece of candy about ½ inch long.

You can go ahead and eat them right now. Usually (if I have any left) I let them set to dry for 8 - 10 hours. Once they are a little dry, they can be put in a jar or bowl without sticking to each other. Trouble is they don’t always last that long. Well, I hope you ENJOY!
