Bulgur Filled Butternut With Feta

This is a recipe for a bulgur filled butternut. This is an easy main course that looks amazing!

What You Need

Here is what you need for the bulgur filled butternut:

- a small butternut pumpkin

- a paprika

- one onion

- 150 gr bulgur

- salt, pepper and sugar

- feta

- 15 gr chopped almonds

- oil

- chili (if you like)

Preheat your oven to 200°C.

Wash the butternut and cut it in half. Remove the seeds.

Now get some of the pumpkin flesh. Make sure you still have about 2 cm left. Chop the pumpkin flesh into small pieces and set it aside.

Take a tablespoon oil and cover the pumpkin.

Put the pumpkin for at least 25 minutes into the oven.

Make the bulgur. Boil 350 ml of water and add it to the bulgur. Stir well and set aside.

Now chop the onion into small pieces and the paprika into ca 0.5 cm small cubes.

Heat the pan and add 1 tbs oil. When it´s hot pan fry the onions and the paprika for 3 min. After that add the pumpkin flesh and pan fry for another 3 minutes. Now add salt, pepper and sugar as you like it. If you want you can add some chili, too to make it spicy.

Add the bulgur to the paprika-oinion-pumpkin flesh. Now add the almonds.

Mix everything together.

Get the pumpkin out of the oven.

Next fill the bulgur-mix into the pumpkin halfs.

Put some feta on top of it.

Now put this back to the oven for ca 6-8 minutes or until the feta gets a golden crust.
