Bulgarian Meatballs

Bulgarian meatballs is a traditional Bulgarian meal,very distinctive dish popular in Eastern Europe on the Balkan Peninsula. It is named after a group of very frugal people called shopi who live in the capital of Bulgaria, Sofia. These meatballs are called kyufte and are typically made from ground beef or pork, more often a mix of the two. They can be shallow fried or grilled and often contain diced onions and soaked bread.

INGREDIENTS (for 4 People)

  • 2 lbs minced meat (60% pork, 40% beef)
  • 1 onion, chopped
    1 tablespoon salt
    1 tablespoon ground black pepper
    1 glove garlic, minced
  • 1 cofee cup white flour
  • 4 slices sour daugh bread
  • 3 tablespoons summer savory
  • 5 eggs
  • 1 tablespoon baking soda

Preparation

Fill in small to medium ball half way with water and add the bread inside.Soak the bread in the water to rehydrate and squeeze out excess water.

In a separate bowl combine all the ingredients together: eggs, meat,baking soda,salt, pepper,flour and the bread( without the excess water). Mix everything together using your hands for about 15 minutes, untill all the ingredients are mixed well with the meat

After you mixed all the ingredients together, leave it in the fridge for one hour and then take out and shape them into big balls.Once all the meatballs are done, fill in a pan with oil and fry untill golden brown and crispy.

When ready place in a serving dish and garnish with cucumbers, tomatoes and french fries/ mashed potatoes.
