Buffalo Chicken Mac N Cheese

So, it's a slow beginning to a work day. Work for me involves a Chef coat, a kitchen and a country club. A co-worker of mine says to me "I want mac n cheese....buffalo chicken mac n cheese...how do we make that?" LET'S GO! I put on my gloves and got to work. Taught this awesome hardworking 17 year old how to make simple crispy fried chicken and a 4-cheese cheese sauce. The half hotel pan came out of the oven and she dug in. Took the WHOLE thing home leaving behind a half cup in case anyone wanted to try it LOL!

So that's the story. Here's the recipe.

2 C Pasta

4 C Water

..................

3-4 C Four Cheese shredded cheese blend

1 1/2 C Cream

1 tbsp Worcestershire sauce

1 tsp garlic and onion powder

....................

3/4 C Buffalo Sauce

4 Chicken Breasts

1 C Flour

1 C Herb Breadcrumbs (with salt, pepper & garlic powder)

2 eggs

Bring a pot of water to a boil. Enough to easily cover the amount of pasta you'll be making. Add a small dash of salt to the water after it comes to a boil, then add the pasta. Allow the pasta to cook for about 10 minutes or until al dente.

Make the cheese sauce in a small pot or large saucepan. Start by adding a roux (butter and flour) and cooking until light brown with a slightly nutty flavor. Slowly whisk in cream and bring to a simmer. Add shredded cheese, 2 dashes or Worcestershire sauce, garlic powder, pinch of salt and pepper.

After the pasta is fully cooked, drain completely and add cheese to the pasta. Mix.

Fried Chicken Breast

In three separate bowls...

Flour the chicken breasts, dredge in eggs, then finish with a coating of breadcrumbs.

Fry for about 6 minutes or until browned. Then, cut the chicken into pieces and toss with buffalo sauce. Combine with pasta.

Bake It and Enjoy!!!

Spray a baking dish with nonstick spray or coat with vegetable oil or butter. Place pasta into the dish then top with cheese. Lastly, top with more shredded cheeses and bake at 400 degrees for 10 minutes or until golden on top.
