Buffalo Cauliflower

This is a great low carb tasty side dish. The heat can easily be adjusted with your favorite hot sauces or even fresh peppers.
Buffalo Cauliflower

Gather your ingredients
1 head of cauliflower
1/4 cup oil ( I use olive oil but favorite oil should work as long as it can handle high temperature)
1/4 tsp ancho powder
1/4 tsp cayenne powder
1/2 tsp paprika ( I like smoked paprika )
1/2 tsp onion powder
1 tsp garlic powder
1/2 tsp salt
1/4 tsp pepper
1/2 cup favorite buffalo sauce
optional:
freshly chopped pepper (the picture is scorpion pepper)
Combine Ingredients

Preparations:
*Preheat oven to 400
Step 1:
Combine dry ingredients into small bowl
Step 2
Cut up cauliflower into medium florets
Step 3:
Coat cauliflower with oil and dry ingredients
Step 4:
Place in 400 degree oven for 18-25 minutes (this is a texture preference, longer times = softer texture)
* I like a more firm texture so I stay closer to the low end of the time
Final Steps

*If you use fresh peppers, combine with your buffalo sauce
Step 5:
Remove the cauliflower from the oven and add to a mixing bowl.
Step 6:
Pour buffalo sauce over the cauliflower and toss to coat
Step 7:
Enjoy with your favorite main dish!
