Budget Breakfast for One – Scrambled Eggs With French Toast
I love this recipe because it’s very flexible in what you use and how much you want to use of the main ingredients depending upon what flavor(s) you like, and how hungry you are.
- This recipe uses 5 eggs, but you can always add another egg to the recipe for scrambled eggs. That way you will have used exactly half of your 1 dozen egg carton and have exactly enough left for one more Budget Breakfast!
- I used plain creamy goat cheese but you can also get flavored goat cheese to add some zing to your eggs, such as Tomato Herb or Ranch flavored options depending upon your store offerings. I also get a ton of extra packets of red pepper flakes with take home pizza, so you can also add those in to your eggs for a different flavor!
Supplies
Scrambled Eggs – Ingredients/Supplies
- 3 Jumbo eggs
- Salt
- 3.5oz Creamy goat cheese
- Small non-stick pan
- Spatula
French toast – Ingredients/Supplies
- 2 Slices of your favorite bread
- 2 Jumbo eggs
- 1C measuring cup
- 2% Milk
- Fork
- Container (wide enough to lay 1 slice of bread flat)
- 2Tb Salted sweet cream butter
- Medium non-stick pan
- Spatula
Prep
Make your French toast mixture before starting your scrambled eggs. Crack 2 eggs into the container and whisk together with a fork. Then add 1C milk to the eggs and whisk again.
Scrambled Eggs
Add the eggs to the pan and mix up with the spatula. Then, add the goat cheese (this gives the eggs more flavor and makes them extra creamy) and break it into smaller pieces with the edge of the spatula. Start to cook your eggs using a medium heat, stirring them every so often to melt the cheese and create a more consistent mixture.
French Toast
In the meantime, heat up your medium-sized pan with 1Tb butter on medium heat. Coat the bottom of the pan with the melted butter. When the pan is hot enough and the butter is all melted, dip your slice of bread into the egg and milk mixture. You can push the bread down with a fork to coat it on both sides. Then place the slice of bread into the hot pan. When the bottom side is a nice golden brown, gently flip it to the other side and brown. Remove and set aside on a plate. Then add the other 1TB butter, melt it, and repeat the process with your other slice of bread.
Scrambled Eggs - Finish
While you’re finishing up your French toast slices, turn the heat on your scrambled eggs down to low so as not to not overcook them. At this point you can add a little salt if desired. Turn off the burner and remove the pan from the heat. Place your eggs onto your plate with the French toast and enjoy your hearty breakfast for one!
