Brunch Leftover Friattata (thing)
I needed something to eat and there were some random leftovers in my fridge.
It's quite good!

Ingredients
Leftover spaghetti noodles (with our without sauce)
Onions, red peppers and hot peppers (optional)
peas (or other ingredients that are already cooked)
2 eggs
1 left over Italian sausage
cheese
Any desired seasonings (I used a bit of garlic powder, a dash of soy sauce, and pepper)
oil (I used sesame)
Pan that is oven safe to cook in.

Saute the Aromatics
Put a bit of oil into your non stick pan and heat it up. On my stove this had a setting of 6 (out of 8) to get hot but not scorching...
Saute the onion and peppers until soft push them around so they are scattered around the pan.
Add the softer peppers and vegetables on top

The Meat and Noodles
Put down the sausage (cut into small chunks) and the spaghetto on top of that. Loosen up any spaghetti so it's scattered around.
Eggs and Cheese
Season the noodles as you wish (I put on a bit of garlic powder, soy sauce and pepper).
Scramble the eggs and pour them all over (drizzle it slowly around so some gets gets everywhere)
Add some shredded cheese on top.
Cook for a couple minutes so the bottom most eggs sets.

Broiler Bound
Put it into the oven and let it cook for a couple minutes.
The cheese should get lightly browned in spotes.
Slide it out onto a plate (or two if you aren't starving & have someone demanding a share)
Eat it with a slice or two of toast if you need something to push it around with...
