Brunch Taco or How to S T R E T C H Your Food Budget

This "recipe" came about when my daughter needed to cook up some ground beef that had been in her fridge for a couple days, she cooked it up, added scrambled eggs and cheese and made it into sandwiches. It was really tasty and filling but I thought I could add to it. Follow along to see what I did.

 I was planning on making this into a burrito and calling it a brunchito but then realized I didn't have the right size tortillas.

The Ingredients

approximately 1/4lb of ground beef, you could use turkey or sausage
2 eggs
 1 potato
 diced onion
 2 pickled jalapeno peppers and or green bell peppers
 cheese

The Potato and Onion

cut your potato in half, cut each half into 4 slices, roll the slices on their side and slice in half again, then slice into small cubes.
Cut the onion in half, and dice one half https://www.instructables.com/id/How-to-dice-an-onion-1/ put the other half in a ziplock bag or wrap in plastic wrap and store for later.

 Put the diced potato and onion in a hot pan with butter or margarine or olive oil or your favorite cooking oil

 Cook until the potatoes are tender and have a golden brown color

 Place the hashbrowns in a container for later

The Meat

add your ground meat and remaining onion and peppers to the still hot pan and cook until the meat is brown, drain off any grease and push to the side of the pan

mix your 2 eggs with 2 tablespoons of water (I used an immersion blender) and add to the pan, mix in the cheese, ground meat and hash browns and stir until the eggs are cooked to your liking

Place about a cup of the egg and meat mixture on a warmed tortilla, add the salsa of your choice or just use catsup or mustard if that's what you like. I popped mine in a convection oven to crisp the tortilla a little more.. totally up to the maker.

 

Serve and Options

Depending on portion size and any additional toppings like lettuce or baby greens this recipe could make 8-10 tacos or 3-4 good sized burritos and most likely 6 good sized sandwiches on either bread or rolls. or serve it up on a plate with toast https://www.instructables.com/id/scrambled-eggs-wcheese-and-sausage/

 As shown I used a medium sized flour tortilla and skipped the rabbit food, a fork may come in handy for any escaping pieces
