Brown Sugar & Cinnamon Breakfast Bites


Ingredients you will need:
1 c all-purpose flour
1 tsp baking powder
2 tsp sugar
1 egg, beaten
1/2 tsp vanilla
1/2 c milk
2 tsp cinnamon
2 tbsp brown sugar
2 tbsp butter, melted
Dry Ingredients


In a medium mixing bowl, combine your dry ingredients.
Wet Ingredients


Now, in a separate bow, combine the wet ingredients.
Combine Everything!


Pour the wet ingredients into the dry ingredients and stir them together until thoroughly combined.
Divide Evenly!

Divide the batter evenly into your mini cupcake pan, about half or a little less than half in each space. I was a little too greedy for some of these and overfilled them, so in the end there were empty spaces.
Baking Time

Place the pan your oven that has been preheated to 375° and cook for 8-10 minutes.
Making the Glaze

While your bites are baking, it's time to make the glaze. You will need:
2 c powdered sugar
2 tbsp butter, melted
1 tsp vanilla
1 tbsp milk
Making the Glaze



In a small saucepan, combine the powdered sugar, vanilla and butter, then slowly the milk a little at a time while stirring the ingredients. Mix until you get the consistency you'd prefer. If you want a thinner glaze, just add more milk to the recipe.
Check for Doneness

At about 8-10 minutes you can check for doneness.
Top Your Bites

Glaze your bites, I made my glaze on the thick side, so you might even get away with dunking them completely and letting the glaze harden before eating, but I wanted to let the brown sugar and cinnamon be the stars, and the glaze to have a cameo on my bites, so I just gave them a little topping.
