Preheat the Oven
Let’s start the recipe off by preheating the oven to 350 degrees F or 175 degrees C. This will ensure that when it is time to bake your brookie your oven will be ready!
Grease the Dish
To ensure that your brookies do not stick, make sure to grease your 9x-13 inch baking dish.
Mixing Ingredients in a Large Bowl
In a large bowl mix together 1/2 a cup of butter, 1/2 a cup of light brown sugar, 1/4 cup of white sugar, and 1/2 a teaspoon of vanilla extract.
P.S. Make sure to melt the butter before you mix it in with all the other ingredients. It makes it easier for all the ingredients to mix together.
Add an Egg
Then in that same large bowl add 1 egg and mix it into the other ingredients for 2 minutes straight or until it is fully mixed.
Mix Ingredients in a Separate Bowl
In a separate bowl mix together 1 1/4 cups of flour, 1/2 a teaspoon of salt, and 1/2 a teaspoon of baking soda.
Mix Both Mixtures Together
Next, you need to get the mixture that you just created and pour it into the bowl with your butter mixture.
Finalizing Your Cookie Layer Dough
Mix your mew mixture until it has formed into a dough-like consistency, you have now finalized you cookie mixture or cookie layer. During this step you may also add 1 cup of chocolate chips, I feel that this helps give the cookie layer more of a sweeter taste. Also, it is not mandatory to add chocolate chips, only if you want to.
Spreading the Cookie Layer on the Dish
After you have your cookie layer dough you must evenly spread the dough on the bottom of your baking dish.
Starting Your Brownie Mixture
In a bowl mixture together 1 cup of white sugar, 1/2 a cup of melted butter, and 1 teaspoon of vanilla extract together.
Mixing the Egg
Crack 2 eggs in that same mixture you just made and beat until the eggs are completely mixed into the mixture.
Mixing the Cocoa Powder
In the same mixture as before add a 1/3 cup of cocoa powder and mix together until fully blended.
Mixing the Final Ingredients
Into the same mixture you used before mix in 1/2 a cup of flour, a 1/4 teaspoon of baking powder, and a 1.8 teaspoon or salt. Mix everything together until a dough like structure has formed.
Spreading the Brownie Layer on the Dish
After you have your brownie layer dough you must evenly spread the dough on top of you cookie layer in the same baking dish.
Baking Your Brookie
Next bake your dish of both the brownie and the cookie layers in the preheated oven for about 20-25 minutes.
Your Finished Brookie
After your dish has baked completely, take it out of the oven and let it cool for 5 minutes. Enjoy!
