Bright Green Broccoli Cheddar Soup

Broccoli is one of my favourite vegetables because of its flavor and versatility of consumption methods. You can eat it raw with some dip, cooked into foods, or made into soups.

The usual Broccoli soup people think of is a white creamy soup that has a delicious taste but is usually high in calories. This is not the only way you can make broccoli soup and still have it be delicious. Not only is this soup simple it packs a visual punch that will get the attention of anyone at your dinner party or social media page if you feel like showing off !!

For this instructable I'll make the simplest Broccoli soup that is extremely healthy and can be made in 15 minutes.

Materials needed

  • Blender or Mixer
  • Pot for boiling

Ingredients

  • Good amount of broccoli
  • Water
  • Salt & Pepper

Garnish Ingredients

  • Cheddar cheese (optional)
  • 1 slice of french bread per serving.

A soup like this can be made very quickly which makes it perfect for a dinner party starter or just a quick healthy meal when you don't have much time.

This soup can be made in 15 minutes from start to finish and has the easiest directions possible.

**Start boiling water and get it to a rolling hard boil**

Step 1 - Cut Broccoli bunch into spears

Step 2 - Season boiling water with 1 TBS salt

Step 3 - place broccoli into rapid boiling water and cover with a lid cook for 4 minutes ( toast 1 piece of french bread while the broccoli is cooking)

Step 4 - strain cooked broccoli from water but KEEP the water

Step 5 - Place cooked broccoli into a blender or mixer and pulse a few times then add small outs of the water to the blended mixture until you reach your desired consistency.

At this point taste the mixture and add salt if needed **Under salted vegetables are a let down dont be shy with the salt but lake sure you taste it and avoid over salting***

Step 6 - place a bit of cheddar into the bottom of the bowl then pour the still hot soup over the cheese. Now drizzel a small amount of EVOO (extra virgin olive oil) into the soup and garnish with small amounts of cheddar then add the toast and top with a hint of fresh cracked black pepper to taste,,,serve.

And Boom!! you are done

The cheese in this recipe is optional and can be removed making the soup almost zero calories. I like adding small amounts of cheddar because the sharpness of the cheddar compliments the broccoli so well.

This process can be done with many different vegetables as well like asparagus, carrots, cauliflower so feel free to switch out the greens for some other colour and ENJOY (Cooking times for different vegetables may very)
