Breakfast in a Mug

I am a little short of words because I am amazed how easy certain things in life have become when technology meets out of box thinking. One such example is this easy, simple, fluffy and delicious breakfast in a mug which came together, start to finish in 2 minutes.

Ingredients

  • 2 eggs

  • 2 tbsp Milk

  • 1 tbsp scallion/ green onion chopped

  • salt and pepper

  • Add eggs to mug and whisk together with a fork

  • Add salt, pepper, milk and scallions.

  • Whisk until all ingredients are completely mixed together.

  • Microwave for one minute. Stir and break up any large chunks of egg.

  • Cook for another 30 to 45 seconds or until eggs are set.

  • Top with a sprinkle scallions, salt and pepper. Enjoy :)
