Breakfast Sausage and Cheese Sandwich

I recently woke up in NZ's tough Level 4 Covid-19 lockdown. Restaurants were shut and only grocery stores and pharmacies were operating, so that meant doing without a breakfast favorite for the next month

Not so, says I.

I gathered together the ingredients to make my own copycat recipe and this is what I came up with. Juicy, Spicy and a hint of sweetness. Goes perfect with a hot cup of coffee and the morning headlines.


Ingredients
2 teaspoons dried sage
2 teaspoons salt
1 teaspoon ground black pepper
¼ teaspoon dried marjoram
1 tablespoon brown sugar
⅛ teaspoon crushed red pepper flakes (or to taste)
1 teaspoon smoked paprika
1 Tablespoon Caraway seeds
1 Tablespoon Fennel seeds
1 pinch ground cloves
2 pounds ground pork
6 slices processed cheese
6 Parmesan cheese English Muffins.
Margarine, to spread

Mixing Everything Up

Mix all ingredients together in a large bowl until well blended. This mix can be used immediately, or stored in an airtight container in the refrigerator overnight

Pattys!

Form patties by hand, or using any available patty press. Keep in mind, depending on the fat content of your ground pork, patties may shrink when cooked.

Fry 'em Up

Cook over medium heat for 10 minutes per side, pressing them down to release the juices into the pan. Patties are done when juices run clear and drippings have caramelized in the pan

Toaster Time

Split and toast your favourite brand of cheese English Muffins. Slather with butter or margarine

Cheezy

While the toaster is doing it's thing, unwrap your cheese and fold the corners toward the middle . This is to make sure all that goodness stays well inside the sandwich.

Assembly

Place a buttered muffin half on a plate, followed by a patty , top with a cheese slice and cap with the other muffin half. Cheese is best on top, because, as it melts, it will cause the patty to slide around, and you risk losing cheese.
