Family Bread Pudding Makeover

our family absolutely loves Bread Pudding (there was a passed down, ravenous NEED for it)

after many years of my grandmother making it for me, i grew up, had children of my own and now make it for MY family.

so....
my mission was to take a classic dish that I grew up with, keep it simple by using ingredients that most people may already have, and have a bit of fun recycling our stockpile of frozen bread scraps. 
After many attempts and samples, this was the favorite.

with this recipe, I get my nostagic food fix and was able to create a new look for my long time bread pudding pal. 





The Ingredients

power tools
immersion blender OR  regular blender
whisk /  fork (elbow grease)

maple cinnamon butter
1 Tbsp. maple syrup 
4 Tbsp. butter (softened)
1/3 cup powdered sugar
1 tsp. milk
1/4 tsp cinnamon

breadcakes
4 slices of leftover bread, torn into pieces (you can also use hot dog/hamburger buns too, just make sure the hamburger buns are w/o seeds)
1/2 cup milk 
1 Tbsp. milk
1 tsp. baking powder
1 egg
1/2 tsp. vanilla

*******this recipe makes (6) 3" wide pancakes


Bread Bath

In a bowl, combine the bread, and milk and set aside to absorb.


The Butter

in another bowl combine the butter, powdered sugar, cinnamon, maple syrup and the 1 Tbsp. of milk and whisk until smooth.

set aside.

Blend

grab the bowl of bread that has been soaking in the milk and take your immersion blender (or just dump the bread and milk into your standard blender) and mix thoroughly until there are no more visible lumps of bread left.
you can also mash it up with a fork if you do not have a blender!
the bread/ milk mixture should be mushy now.

then add your baking powder, egg and vanilla and finish the mixing with your whisk.

Cook'em Up

heat up a non-stick skillet or griddle pan on medium heat.
grease it up with a bit of butter, and drop the batter onto your pan as you would do regular pancakes. 
the pancakes are ready to flip once the edges are golden brown and you see little bubbles forming on top of the uncooked side.
(i cooked mine for about 3-4 min on one side then flipped to cook 2 min on the other side.)


Plate It Up

stack your pancakes and add a heaping spoonful of the maple cinnamon butter.

no syrup needed, but i certainly will not hold it against you.
