Bread Machine GF White Bread That Wheat-Eaters Love

With two grandchildren with celiac disease, I've experimented with gluten free cooking and baking for more than 15 years. This gluten free white bread is delicious and is a favorite of the kids. This bread does not use any flours that leave an odd after-taste or use ingredients I can't pronounce. It makes nice slices that can be used for sandwiches, toast, French toast or whatever you choose.

I buy flour at the local Asian store because it it much less expensive than health food store prices. The xanthan gum is available through Amazon or at Walmart. I have not found a ready-made gluten free bread flour as good as this recipe.

You can choose to bake the loaf right in the bread machine. My machine makes a huge loaf that is not really a good size for sandwiches, so I bake the bread in loaf pans. With a muffin tin, I can also make delicious dinner rolls.

Just remember, there are no preservatives in this bread so it is best eaten within a day or two. It's so yummy, that's never been a problem! This is the one and only bread I serve when there are gluten-sensitive diners at my table. Even wheat eaters love this bread.

Wet ingredients

  • 3 large eggs at room temperature
  • 1 teaspoon apple cider vinegar
  • 1/4 cup of canola oil
  • 1.5 cups of warm water

Dry ingredients

  • 2 cups of white rice flour
  • 1/2 cup of potato starch
  • 1/2 cup of tapioca flour
  • 1/3 cup of cornstarch
  • 2/3 cup of dry milk or powdered coffee creamer
  • 3 tablespoons sugar
  • 1.5 teaspoons salt
  • 1 tablespoon xanthan gum
  • 2 1/4 teaspoons bread yeast

Supplies

  • bread machine
  • mixing bowl
  • wire whisk
  • 1/2 cup measuring cup
  • 1/4 cup measuring cup
  • 1/3 cup measuring cup
  • 1 tablespoon measuring spoon
  • 1/2 teaspoon measuring spoon
  • 1/4 teaspoon measuring spoon

Mix Wet Ingredients in Pan of Bread Machine

  • stir lightly with a chop stick or knife just to break up the yolks

Mix Dry Ingredients

  • add all dry ingredients to a mixing bowl
  • use a wire whisk to blend well

  • start bread machine to bake bread

If Baking the Bread in Oven (Option #2)

Set machine to dough setting and when ready

  • spray loaf pans and/or muffin tins for dinner rolls with pan spray
  • spoon dough into loaf pans and/or muffin tins
  • wet fingers with water to smooth down the top of the dough
  • cover with towel and let rise is a warm place for about 30 minutes while preheating the oven to 375 degrees F.
  • bake rolls for 20 minutes; bread for 25-30 minutes or until golden brown
