Bread Kugel
Kugel is an Eastern European casserole. We grew up with a a noodle version. It's also popular with potato. I've never heard of Kugel being made with bread.

Ingredients
For a 9" x 9" baking pan here's what I used:
- Eggs (6)
- Milk (1/2c)
- Bread (1/2 loaf) - old bread is perfect. Figure enough bread cubed to come to the top of the pan
- Ricotta (15 oz) - that's one small container
- Spices - pinch of basil, white pepper, black pepper, taco seasoning, salt. Flavor as though you are seasoning any egg dish.
---yes, I regularly use taco seasoning. It's a mix of chili , cumin, garlic, onion, paprika... basically all good things
Egg Mix
Here I use a stand mixer. Not necessary but useful. If not a mixer I would reach for a fork or whisk.
- Eggs - mix all six eggs on low
- Milk - add half cup on low
- Ricotta - add on low
- Spices/Salt - off or low
- Higher Speed - once all are incorporated whisk thoroughly at medium speed to incorporate air
Mix in Pan
In a greased baking pan add your mix. I allow the mix to soak into the bread as the oven preheats to 350 deg.
Bake + Serve
Baking Instructions. Place the dish in the oven at 350 deg. Immediately turn down to 300. Allow to bake for 45-60min or until top starts to brown (as you would a quiche). I finished the bake with high broil for 2-3 min.
Serve. Allow to settle a few min. Allow more time if you want pieces to hold their shape.
