Bourbon Apple Pie Preserves

I love fall. It inspires me to make the things I have dreamed about all summer. Apples are plentiful in my area, so I make anything and everything using them. Today it was Apple pie preserves. And what would Apple pie be without bourbon??? Boring.....

Chop and Peel Apples

Chop, peel and core 2lbs of apples. You will want very small pieces, no more than 1/4" each.

Ps. If you don't have this gadget, get one. Especially if you have kids. They will love it!!

Macerate

Add apples to large bowl. Top with both sugars. Mix well. Put in fridge over night, or if you are like me, a couple of days. This will allow the natural juices to come out of the apples.

Cook

In a shallow nonstick skillet, cook mixture on high until rolling boil, stirring often. Add 2 cinnamon sticks, vanilla bean, cloves and nutmeg. Once boil is achieved, lower heat to medium. Cook for approximately 40 minutes, until mixture is starting to thicken. Add bourbon and cook for another 10 minutes. Preserves should be rather thick.

This will make two pints. Store in fridge for up to 30 days. This is delicious on bagels, in cocktails, and..... Did I mention it's delicious in cocktails???
