Botana Platter

A Botana Platter is basically like nachos but in a large quantity and a few little twists. Be prepared to have a party when making this because it is definitely not a dish for two.

Ingredients

Ingredients
1-2 bags Tortilla chips
Re-fried beans
Cheddar cheese
Goat cheese
Cilantro
1 Green bell pepper
1 Onion
1 pkg Fajitas  (aka real fajitas also called Skirt Steak)
4 Chicken breasts boneless skinless
Sour cream
3-4 Avocados to make into guacamole
1 jar of Jalapenos
Corn tortillas
Garlic powder
Lemon Pepper
Season salt

Saute and Heat

Slice up your onions and bell peppers and saute them in some butter or oil, as well as sprinkle in some season salt, garlic powder, and lemon pepper. Cook them down slightly throw in some cilantro at the last minute and then set aside for later.
Heat up your beans and also set them aside.

Now you want to generously season your Chicken and Fajitas. Also as a side note real Fajitas are not just steak cut up but there is an actual meat for this. It sometimes is called Beef Skirt or Skirt Steak. If you haven't had that you will want to hunt some down it tastes amazing. It is a little more expensive because it comes from the under side of the ribs so there is only two cuts on a whole cow. Now on to seasoning the meats. I coat them with johnny's season salt, garlic powder, and lemon pepper. Remember to season both sides. Now grill away, when everything is all nice and grilled it is now time to slice the meats and get ready to start layering!

Pile it on, also you can throw in a few quesadillas as well. Just fry up a corn torilla as shown in the pics and then filled with desired cheese and place on top of everything and then pop it all in the oven until all the cheese is melted and bubbly. Now enjoy with friends!
