Blueberry Slump
Ingrediants:
- 4 cups frozen blueberries
- 1\2 cup sugar
- 1\2 cup water
- 1 tsp. of grated lemon peel (optional)
- 1 tbsp. lemon juice
- 1 cup all-purpose flour
- 2 tbsp. sugar
- 2 tsp. baking powder
- ½ tsp. salt
- 1 tbsp. butter
- ½ cup milk
Vanilla ice cream
Directions
1.Preheat oven to 400. In a 10-in ovenproof skillet, combine` blueberries, sugar, water, lemon peel, and lemon juice; bring to boil (help the kids with the oven make sure they don’t touch!) Reduce heat; simmer uncovered, 9-11 minutes or until slightly thickened, stirring occasionally.
2. Meanwhile in a small bowl, whisk flour, sugar, baking powder, and salt. Cut in butter until mixture resembles coarse crumbs. Add milk; stir just until moistened.
3. Drop batter in 6 portions on top of simmering blueberry mixture. Transfer to oven
4. bake, uncovered, 17-20 minor until dumplings are golden brown. Serve warm, topped with vanilla ice-cream.
