Blueberry Pancakes With Blueberry Syrup
Today (January 28, 2018) is National Blueberry Pancake day and in this instructable, I will show you how to make awesome blueberry pancakes with blueberry syrup that's so good you don't want to just eat them one day a year.
Ingredients
For this recipe you will need:
1 c blueberries
2 c all-purpose flour
2 1/4 c buttermilk
4 tbsp melted, unsalted butter
3 tbsp sugar
1 tsp salt
1/2 tsp vanilla extract
1 tsp baking soda
2 tsp baking powder
2 eggs
Using the Electric Mixer
Using an electric mixer, beat the eggs until they become frothy.
Not Using the Electric Mixer
Add in all of the other ingredients except the blueberries to the eggs and stir with a spoon until they are combined, but do not over mix.
It's Time for Those Blueberries!
Now pour 1/3 c batter on a griddle set to medium high heat. Top the pancakes with blueberries.
Flip!
Cook the pancakes for 2 minutes, or until golden brown, then flip and cook the other side for 2-3 minutes until it is golden brown also.
Stay Warm!
Keep the pancakes warm while cooking the rest by placing them on a baking sheet in an oven preheated to 200°.
Blueberry Syrup
3 c blueberries
1 c water
1/2 c sugar
1 1/2 tbsp cornstarch that's been dissolved in 3 tbsp water
1/2 tsp vanilla extract
Super Easy, Just Started and You're Almost Finished.
In a small saucepan, add 1 1/2 c blueberries, water, sugar and vanilla and cook on medium high heat until it starts to boil.
Just a Couple of More Minutes!
Stir in the cornstarch and lower the heat. Cook for an additional 2-3 minutes, or until you get the desired consistency of the syrup that you want.
Remove the saucepan from the heat and stir in the rest of the blueberries.
Enjoy!
Top the pancakes with the syrup and enjoy!
