Blackened Chicken

This is an easy way to cook Blackened Chicken over a charcoal grill, and have a great taste.

This is my first Instructable, so please give me questions, comments, and advice.

Making the Seasoning

My recipe for Blackened seasoning consists of the following:
1 teaspoon of oregano
1 teaspoon of thyme (leaf)
1 teaspoon of ground black pepper
1/2 teaspoon cayenne pepper
1/2 teaspoon ground red pepper
2 teaspoons of onion powder
2 teaspoons of garlic powder
2 tablespoons of paprika
and a little salt.

Just mix it all up in a bowl or little canister

Gather Ingredients and Prepare Tools

Ingredients are as follows:
Blackened Seasoning
Chicken
Non-stick spray (optional but preferred)

Tools:
Tongs
Charcoal grill

Heat the Grill

Get the grill hot. Hot grates will make cooking so much easier.

Partially Cook Your Chicken

Put your chicken on the grill where there is the most heat at first. Then let it cook for a few minutes on both sides. Then move it to a spot on the grill with less heat. (To me, it helps seal in a lot of the juices and prevents everyone from eating dry chicken)

Blacken the Chicken

Spray some of the non-stick spray onto your chicken, then sprinkle the Blackened Seasoning. You should try to put a thin, even layer across the exposed side of your chicken. Then flip it and do then same for the exposed side again. Then wait for a minute, and flip your chicken. Just keep flipping every minute or so until you get the desired color for your chicken. The heat from the grill will cook the Blackened seasoning into the chicken.

All that's left is to pull the chicken off the grill, and onto your plate. As you can see, I prefer mine with Cole slaw and French fries.
