Blackberry and Apple Muffins

I love freshly picked blackberries but was struggling to find a way to use them differently so when I saw Makergirl's Best Blueberry Muffins I thought I'd give blackberry and apple muffins a try.

1 egg

60 ml oil

120ml milk

1 tsp cinnamon

165g flour

100g sugar

1 apple (peeled and grated)

100g blackberries

1/2 tsp salt

2tsp of baking powder

Mix the Ingredients

Beat the egg in a mixer and add the milk and oil.

Add the flour, salt, cinnamon, sugar and baking powder and stir gently until combined.

Add the grated apple and mix.

Gently fold in the blackberries so as not to break them up.

Bake!

Spoon into a 12 muffin cases.

Bake at 190 degrees celsius for 20 minutes.

Allow to cool slightly in the tin and then transfer to a wire rack.

Sprinkle with a little icing sugar. They taste great when still slightly warm.
